You can easily replace the kale with cabbage or other ingredients, and you can mix up the mushroom variety depending on your budget. The ingredients also keep very well on a camping trip!Vegetarian Barbecue Mushroom SandwichIngredients1 ½ pounds mushrooms (variety depends on season and taste; we used portabellas)1 head kale or cabbage (we like lacinato kale, but red cabbage would be a good substitute)2-3 grated carrots1 red onion1 cup mayonnaise½ cup apple cider vinegar2 tablespoons vegetable oil1 cup barbecue sauce4 buns or rollsDirectionsMushroomsStep 1Heat up the grill over the fire for 20 minutes until hot. Coat with olive oil and add the portobello mushrooms. Cook for about 20 minutesStep 2Remove mushrooms from the grill. Once cool, cut them into slicesStep 3Add mushrooms, oil and barbecue sauce to a saucepan on the grill. Cook for 5-7 minutes, or until the sauce starts to caramelize a bitSlawStep 1Thinly slice the kale and onion. Grate the carrotStep 2Mix the apple cider vinegar and mayo with a bit of salt and pepper in a bowlStep 3Combine all ingredients in a large bowl to finalize slaw.AssembleFinally, toast the buns on the grill.
