I loved waking up to the smell of cinnamon and syrup. I never would have thought you could make it without eggs, but this recipe does it better than the real thing. I'm not even vegan, and I like this better than traditional French toast. The coconut milk makes it sweet and creamy, and it's even better with fresh fruit and coconut on top.French Toast with a TwistIngredients1 lb loaf crusty French bread, cut into 1″ slices1 ripe banana1 (14 oz) can coconut milk1 teaspoon ground cinnamon1 teaspoon vanilla extract1/2 teaspoon saltCoconut oilTo ServeWarmed maple syrupFresh blueberriesShredded coconut flakesDirectionsStep 1In a container large enough to accommodate a slice or two of bread, mash the banana until it's smooth. Add the coconut milk, cinnamon, vanilla extract and salt. Whisk to combine. You want this batter to be as smooth as possible.Step 2Heat 1 tablespoon coconut oil in a skillet over medium heat.Step 3Dip a slice of bread into the batter and let it soak for a few seconds on each side. Let the excess drip off and then fry it in the skillet until golden and crispy on each side, about 3 minutes per side.Step 4Repeat with the rest of the bread, adding more coconut oil to the skillet as needed.Step 5Serve with syrup, fresh blueberries, and shredded coconut.
